Heaven for Kikuyus in a picture, seriously though, beef potato soup is so sumptuous and comforting.

It is sweater weather, trench coat with nothing underneath knocking at your boyfriend’s door weather, cuddle with a warm water bottle or puppy if you have no boyfriend weather, comfort food and hot soup whether for both couples and single self-huggers weather.

And since I am an enabler and I care for you, we got you some soup recipes since acquiring trench coats to enable your love lives is frowned upon by law and known as human trafficking.

So here is a list of my favourite soup recipes, which I love to indulge in, especially when watching my favourite Netflix series underneath a throw with my emotional support teddy bear.

CHICKEN NOODLE SOUP

Ingredients

1/4 cup sliced carrots

1/4 cup sliced celery

1/4 cup chopped onion

3 cups chicken broth or stock

1/2 tablespoon salt

1/2 teaspoon poultry seasoning

1/4 cup cold water

1 cup diced chicken

1 cup noodles

Directions

Pour broth in large stock pot, add salt and poultry seasoning and bring to a boil.

Stir in carrots, celery, and onion. Add the chicken pieces. Reduce to a simmer, cover and cook for 10 minutes.

Cook noodles in a large pot of water, undercook them by a minute or two, and add them to the soup.

There is something that is just perfect about peas and beef, and now peas, potatoes and beef soup, that is beyond perfect.

Serve.

BEEF POTATO SOUP

Ingredients

1/4kg diced beef

1 large chopped onion

1 green bell pepper chopped

3 peeled and diced potatoes

2 cups stock

1 cup water

Ground spices of choice and salt

Directions

In a large pot, put the diced beef, add water and stock and cook till the meat is no longer pink.   

Reduce the heat then add the onions, bell pepper and potatoes and cook till the potatoes are soft.

Add the spices and let it simmer for 2 minutes.

Serve alone or with buttered toast.

VEGETABLE SOUP

Ingredients

1 medium-size sweet onion, chopped

2 cups vegetable stock

1 cup peas.

1/2 cup diced spinach

1/2 cup fresh mint leaves

1 large avocado, sliced

1/3 cup fresh lemon juice

Salt and freshly ground black pepper

Plain greek yogurt for garnishing.

Directions

Fry the onions. 

Add stock, and bring to a boil over high heat.

Add peas, and cook just until tender. 

Remove from heat, and stir in spinach and mint and let it cool slightly.

Stir in avocado and lemon juice. Purée soup in a blender. Season with salt and pepper. 

  Chill until cold.

  Garnish with peas, mint, and yogurt.
